Ingredients

1. 1 cup Finger Millet Upma Rava (Roasted)
2. 2-3 tablespoons oil or ghee
3. 1 teaspoon mustard seeds
4. 1 teaspoon cumin seeds
5. 1/2 teaspoon asafoetida (hing)
6. 1 medium-sized onion, finely chopped
7. 1-2 green chilies, finely chopped
8. 1-inch piece of ginger, grated
9. 1/4 cup mixed vegetables (carrots, peas, bell peppers, etc.), finely chopped
10. Salt to taste
11. 3-4 cups water
12. Fresh coriander leaves, chopped (for garnish)
13. Grated coconut (optional, for garnish)
14. Lemon wedges (optional, for serving)

Cooking Instruction

1. Heat oil or ghee in a deep pan or kadhai. Add mustard seeds and let them crackle.
2. Add cumin seeds and asafoetida. Saute for a few seconds until they release their aroma.
3. Add finely chopped onions, green chilies, and grated ginger. Sauté until onions turn translucent.
4. Add chopped mixed vegetables and cook for a few minutes until they are slightly tender.
5. Pour 3-4 cups of water into the pan. Add salt according to taste and let it come to a boil.
6. Once the water starts boiling, gradually add Finger Millet Upma Rava (Roasted) while stirring continuously to avoid lumps.
7. Reduce the heat to low and cover the pan with a lid. Let it cook for 5-7 minutes until the Finger Millet Upma becomes thick and all the water is absorbed.
8. Once the Finger Millet Upma is cooked, turn off the heat. Garnish with freshly chopped coriander leaves and grated coconut if desired.
Serve hot with lemon wedges on the side for added tanginess.
