1. In a pan, add 2 tbsp of oil, 1 tsp cumin seeds, 1 tsp of finely chopped ginger, green chillies, 1 ½ tsp garlic, 1 onion, 2 tomatoes, and the required salt. Saute them well.
2. Later, add 2 tbsp of Pillai’s Homemade Madurai Veg Curry Masala, the required water, and allow it to boil.
3. To this, grind and add the paste of 15–20 cashews. Cook for 15 minutes on a medium flame until its raw smell goes away.
4. After that, add cooked vegetables of your choice, like carrots, beans, or potatoes, and leave it for 10 minutes.
5. Sprinkle some coriander leaves on top of it.
Now, the Madurai-style vegetable curry is ready.
