1. In a pan, add 2 tbsp of oil, 1 bay leaf, cardamom, cinnamon bark, 2 cloves, 1 chopped onion, 2 green chillies, 2 tbsp of ginger-garlic paste, 1 ½ tomato puree, and the required salt. Saute all the ingredients well until the raw smell goes away.
2. Later, add 2 tbsp of Pillai’s Homemade Madurai Channa Masala, 150 g of boiled chickpeas or channa dal, and the required water.
3. Cook for about 8–10 minutes.
4. Sprinkle some coriander leaves on top of it.
Now, the Madurai-style channa masala is ready.
