1. Add 3 tbsp of gingelly oil, 1 tsp mustard seeds, ½ tsp urad dal, curry leaves, 15-20 garlic cloves, ¼ tsp fenugreek seeds, and 1 finely chopped onion. Saute the ingredients well.
2. Add drumstick pieces, 2 chopped tomatoes, ¼ kg brinjal, 2-3 tbsp Pillai’s Homemade Madurai Curry Chilli Powder, salt, water, and allow it to boil.
3. Later, add ½ cup tamarind juice and cook for 20–25 minutes.
4. Sprinkle some chopped coriander leaves on top of it.
Madurai-style brinjal-drumstick gravy is ready.
