1. Soak a cup of Pillai’s Chana Dal (Split) for about 2 hours. Coarsely blend chana dal, 1 tsp fennel seeds, 4 red chillies, and ½ tsp salt. If required, you can add a little bit of water while grinding it.
2. Transfer it to another bowl and add finely chopped onion, ginger, garlic, green chillies, curry leaves, and coriander leaves.
3. Mix everything together. The mixture should be tough and thick. Take a portion and flatten it.
4. Fry them in enough oil until they are crisp and golden brown.
An evening snack, Masala Vada is ready.
